We love a good farmer cheese here and this recipe has been created in collaboration with Lifeway Farmer cheese and kefir.

Spiced Smashed Radishes and Herby Farmer Cheese

Marinated Radishes

1-2lbs radishes ( about 10-15 whole radishes), cleaned and smashed to break apart but keep whole

7 sprigs dill finely minced or 1 tbsp dried

1 whole mild jalapeno or half a very spicy pepper, finely minced

1/4 tsp kosher salt

2 cloves garlic finely minced

Pinch salt

1 tsp lemon juice

2 tbsp neutral oil

Herby Farmer Cheese dip

8oz Lifeway Farmer Cheese

1/3  cup Lifeway Wiejski or plain kefir

2 scallions

4 sprigs dill

3 sprigs parsley

¼ tsp salt

Optional: a few radish tops

Edible flowers for garnish 

Method:

  1. Smash radishes and set into a large mixing bowl
  2. Combine with seasonings, herbs,pepper, oil and acid
  3. Mix well and let marinade for up to 4 hours or overnight. 
  4. In a food processor blend until smooth remaining ingredients. Taste for salt and adjust if necessary. Best if refrigerated before using. The dip will thicken a little after refrigeration. 
  5. Spread the dip on the button of a serving plate and top with radishes, radish greens and edible flowers. 
  6. Serve with crackers, pita, potatoes or toast.
