Guava and cheese is one of the best combinations. If you were lucky enough to have Caribbean guava and cheese pastries you’d know how amazing the combination is!
This cold treat is inspired by Cuban guava and cheese pastelitos.
You can make it ahead or eat it right away.
If you’re lactose sensitive like I am, then adding Kefir instead of milk or cream to give you that creamy consistency without the hurt later is the move.

Kefir: My secret ingredient in most recipes
My grandmother always said if she had kefir at home she had food to eat. She’d make everything from bread to quick breads and cakes with kefir. It transforms basic flour, salt and water into something very special. The cultures and unique quality of kefir soften the gluten and a toasty home flavor to cakes and breads.
She would also enjoy a glass right before bed or give us a glass before school. It’s filling and good for you while also delicious. A triple threat.
Summer cooking is a free for all and if I can avoid heating up my kitchen that even better.
Lately the cravings have been for something sweet but not too sweet, with a little salt or savory and this 3 ingredient sherbet is the answer. Kefir being the backbone to this satisfying and good for you treat.
Sherbet vs Sorbet
Sorbet is fruit and juice.
Sherbet is fruit, juice and the addition of diary/milk.
That’s it.
Guava Paste
This is a specialty item that you can either order or find in some grocery stores. Look out for guava pasta without additional coloring, dyes or flavoring. Most available guava paste will have 3 ingredients, which is guava, sugar and citric acid.
It comes in a small square or round tin. The texture is a thick paste that can be cut or reduced down with some water into a spoonable syrup.
Guavas pack an incredible amount of vitamin C and vitamin A.
The flavor is bright, floral, sweet and a little tart. I hate to compare it to anything but it would have to be if rhubarb, strawberry, mango and passion fruit came together in one fruit.

Recipe:
1 cup Lifeway Guava lowfat 1% milkfat Kefir
2 cups frozen strawberries
1 tbsp guava paste
2 tbsp water
Topping
1 /4 cup cut strawberries tossed with 2 tbsp guava paste
Mozzarella Pearls
Mint (just for fun)
Optional: Flaky crisp cookie of your choice
Method:
Place guava paste and water into a microwave safe dish and heat in 15 second intervals until thinned enough to easily cover sliced strawberries. Refrigerate.
Into a small food processor add frozen strawberries, guava kefir and guava paste and pulse until combined into a scoopable sherbet.
Serve immediately with cheese, strawberry and cookie garnish.
Freeze leftovers and remove 5-10 minute before scooping.
