Fig Jam and Walnut Cake

The magic happens in mixing the baking soda directly with jam. There’s a video on my Instagram THEWONKYSTOVE showing the process This is a handy cake to have in your back pocket for a quick sweet cake that would work dressed up with ganache for tea or sliced plain next to cheese. Think: Thanksgiving, Valentine’s, Easter, New Years grazing board with slices of fig cake. This also makes for an easy breakfast/midnight snack for guests spending night. It is versatile, easy, delicious and uses a single bowl and whisk. Could you take out the hand mixer, sure but it is totally unnecessary. This jam cake is a fun bake to make with children. They see the reaction of the soda and jam and then get to eat cake at the end of the lesson. Literally having your cake and eating it too.

Baking doesn’t have to be complicated, require special tools or specific techniques that require years of trail and error. Baking cakes does include some of the above and it may scare some people away from attempting a cake at home but there at lots of great, what I call homey and pantry bakes that will get your motivated to try more complex baking recipes.

This however is not a complex baking recipe. This is a simple homey bake, using a pantry staple everyone has at home: JAM! The jam combines with baking soda, eggs and a blend of oat and AP flour to make a truly delicious and easy cake. Use any jam you’d like and adjust the add ins depending on your taste.

What jams could you use? Apricot is delicious, as is plum. Only note it must be a jam, the pectin and acidity of jam is what starts the reaction with the baking soda. A preserve, butter or jelly would not yield a successful bake.
